Muffins with a Twist!

I woke up this morning with a craving for muffins. The first thought that cropped up was banana and chocolate muffins. The best combination ever! I put aside the necessary ingredients and then thought to myself, what am I doing? Today isn't my cheat day! After putting back everything with a heavy heart, I tried hard to get muffins out of my mind. But Alas! So I racked my brains and then remembered that my cousin had long ago given me an egg and Zucchini muffins recipe. Yeah I know right? Egg and Zucchini in a muffin?! But you've got to try this one to believe it. Not only is it super simple to make but also so delectable! Healthy muffins that aren't time consuming to make and will keep your taste buds satisfied as well ; Does it get any better? ;)

Ingredients Olive oil 6-8 eggs 1 tomato Zucchini ( cubed ) Oregano Chilli flakes Garlic powder Salt Cheese ( optional )

Whisk all the eggs together along with the dry ingredients. You can add more or less according to your liking.

Season the tomatoes and zucchini cubes with a little salt and chilli flakes and keep aside.

Next, take a muffin tray and grease the cups with olive oil.

Pour the mixture 3/4th full into the cups.

Now, add pieces of the tomatoes and zucchini on top.

Bake at 170 for 20-25 minutes.

Keep checking with a fork the muffins need to be fluffy and not over baked.

Once it's out serve with any dips or grilled meat of your choice. Enjoy!
