Apples filled with Goodness!

These juicy apples are so warm and delicious making it the ultimate comfort food. The apples are stuffed with oats, walnuts, dried blueberries, cinnamon and a bit of butter. The sweetness of the apples with the sticky texture of oats is so inviting. This is a healthy and satisfying dessert that will keep you wanting for more! It's like eating an apple crumble without all the work and calories.
Ingredients
4 medium to large apples
1 cup whole oats
1 cup chopped walnuts
½ cup dried blueberries/cranberries/raisins
2 teaspoons ground cinnamon
1 teaspoon pure vanilla extract
Pinch of finely ground sea salt
2 tablespoon butter
2 tablespoons raw maple syrup
Instructions
For the filling:
Preheat oven to 350 degrees
In a large bowl boil the oats adding the cinnamon and maple syrup till it becomes slightly thick and gooey.
Wash and carefully core the apples with a paring knife. Scrape the bottom of the core out with a spoon.
Put the apples in a deep baking dish. Liberally spoon the filling into the apples to the top and cover the pan with foil.
Bake for approximately 30 minutes or until you can pierce the apple with a fork and it feels tender.
Top it with walnuts, blueberries and maple syrup and serve warm.
You can serve it with ice cream or fresh cream.
