Summers with Watermelon!
When they talk about beautiful summers, you have to know, they're never talking about Chennai. Each day out in the sun feels like a excruciating challenge that I wouldn't take up even if I was paid for it. In these sweaty, hot days, fruits are my best friends and watermelon is my BFF. I gorge on watermelon (you should too- so light!) and I'm often looking for new ways to deck my watermelon up. I called my sister and asked if she had any ideas and like any older sister, she was full of them! I tossed up a watermelon and Feta salad, exactly like she said and as much as I hate to say it, she made my day. The recipe is as simple as it gets and I hope it makes your hot day a little breezy too!
All you need is:
1/2 Watermelon- peeled and de-seeded
1 Cucumber
1 small bunch of mint leaves, chopped
Cherry tomatoes
Half a packet of sprouts
200 g feta cheese
For the dressing:
2 table spoons olive oil
2 table spoons lime juice
1 table spoon honey
Thyme(optional)
Basil(optional)
Oregano
Salt
Pepper
Method:
Boil the sprouts and keep aside.
Cut the watermelon and cucumber into small cubes.
Mix all the ingredients together ( except the feta cheese) and add the dressing.
Top it with Feta Cheese.
The combination of these simple ingredients was such a blessing to the taste buds and ideal on such a hot day. In summer, easy is the way to go and easy this was :D
